Sourdough Apple Fritters

The best sourdough apple fritters, made with 200g of sourdough starter or discard and fresh apples in under 30 minutes. You can also ferment this mixture overnight if you prefer.

Equipment

  • Large Pot (for deep frying)
  • Slotted Spoon or Spider Net Scoop

Ingredients  

  • 2 L Vegetable Oil (for deep frying)
  • 160 g All Purpose Flour
  • 15 g Baking Powder
  • 40 g White Sugar
  • 5 g Salt
  • 1 teaspoon Cinnamon
  • ¼ teaspoon Nutmeg
  • 2 Eggs
  • 200 g Sourdough Starter (or sourdough starter discard)
  • 5 g Vanilla Extract
  • 3 Apples (my apples weighed around 125g each and total diced apple was 250g).

For The Glaze (optional)

  • 170 g Powdered Sugar
  • 5 g Vanilla Extract
  • 20 g Whole Milk

Instructions 

Before you begin

  • Add the oil to a large pot and begin to heat. You want to have the oil at 175C (350F) when you're ready to fry. Line a wire cooling rack with paper towel (to put the deep fried sourdough apple fritters on) and make sure you have a slotted spoon or spider net scoop handy.
    Prepare the glaze by adding the powdered sugar, vanilla extract and whole milk to a bowl and whisk until smooth. Set this aside.

To Make the Fritters

  • Add the all purpose flour, baking powder, sugar, cinnamon, nutmeg and salt to a small bowl and stir until all the dry ingredients are well combined.
  • In a separate large bowl, add the eggs, vanilla extract and sourdough starter together and whisk until light and foamy.
  • Now add the diced apples and dry ingredients to the top of the wet ingredients and use a spatula to gently combine. It's ok if there is a little dry flour still - don't over mix it.
  • Once the oil is at temperature, use a scoop (like a ¼ cup or mini ladle) to scoop portions of the sourdough apple fritter batter into the hot oil. I usually fry 5 fritters at a time, allowing them to cook for around 2 minutes each side. You'll know they are done when they are a deep golden brown color and really puffy).
  • Place sourdough apple fritters on paper towel to drain.
  • Drizzle with glaze once you're ready to serve the fritters.
